Who doesn’t love a trail-friendly snack? It’s especially lovable when that snack is homemade. One of our Fare and Folly experts put together two sweet ahd healthy recipes for you – so you can chow down on your own energy bites and granola bars.
- Unsweetened Coconut – 1 cup
- Raw Cashews – ¾ cup
- Cocoa Powder – 1 tsp
- Salt – 1/8 tsp
- Dates – 1 ¼ cup – roughly chopped
Toast ½ cup of coconut at 300°F for 4 minutes or until golden brown.
Then, process cashews in a food processor for 4 seconds. Add remaining ½ cup of coconut and 1 tsp of coco power.
Add chopped dates. Dates can be softened in microwave for 30 seconds. Process until mixture comes together. Depending on the moisture content in the dates, you may need to add 1-3 tsp of water to bring mixture together.
Spread the mixture onto parchment paper and pat into squares of desired thickness. Cover in toasted coconut, wrap, then refrigerate until set. Cut into bites of desired size.
- Oats – 2 cups
- Brazil Nust – 1 cup
- Sunflower Seeds – 1 cup
- Apricots – 1 cup – chopped
- Dried Cherries or Mixed Berries – 1 cup
- Canola Oil – ¾ cup
- Honey – ¼ cup
- Maple Syrup – 1/8 cup
- Coconut Oil – 1/8 cup
Process oats in food processor for 10 seconds and add to large bowl. Process brazil nuts for 10 seconds or until course and add to bowl. Process sunflower seeds for 5 seconds and add to bowl. Also add coconut, pinch of salt, chopped apricots, and berries of choice. Toss all dry ingredients together.
Combine canola oil, honey, maple syrup, and coconut oil together and pour over dry ingredients. Toss to combine and spread evenly onto a small, parchment-lined sheet pan. Ensure the mixture is packed down very well.
Toast in oven at 300°F for 40 minutes until just golden throughout. Allow to rest in the pan in the refrigerator overnight before breaking into squares.
