Making coffee cake with grandma

There’s something about a slice of coffee cake, warmed from the oven, that gets me every time.

Any trip to grandma’s house includes it: rolling out of bed, padding down the stairs and smelling that heavenly combination of cinnamon sugar crystallizing in butter in the oven. The cake always comes accompanied by freshly cut fruit, hot coffee and familial laughter. I suggest you do the same.

Prep time: 15 minutes

For the cake

  • 2 c. flour
  • 1 c. sugar
  • 2 tsp baking powder
  • Pinch of salt
  • 1 c. milk
  • 1 egg (beaten)
  • 2 tbsp butter (melted)

For the topping

  • 3 tbsp butter (melted)
  • 3 tsp cinnamon
  • 1/2 c. sugar

  1. Preheat your oven to 350 degrees. Grease (using butter or Crisco) two 8×8 cakes pans OR a 10 inch round.
  2. Mix the flour, sugar, baking powder and salt in a medium sized bowl. Add the milk gradually, mixing between pours. Add the beaten egg and melted butter and stir well. Pour the batter into your greased cake pans.
  3. Combine the cinnamon and sugar in a small bowl. Pour the other melted butter over the cake, and then spoon the cinnamon sugar on top – don’t be shy!
  4. Bake the cake for 20 minutes.

  5. Let cool and ENJOY!
