A fresh spring salad that’s even better the second day. This Orange Poppy Seed Chopped Salad is sure to delight!
Plain Greek yogurt – ¼ c.
Orange Juice – ¼ cup – freshly squeezed
Mustard – 1 tsp
Paprika – pinch
Poppy seed – 2 tsp
Honey – 1 tbsp
Salt – ¼ tsp
Pepper – ¼ tsp
Brocholi – or califlour
Sugar snap peas – or beans of choice
First let’s make the dressing for this chopped salad. Combine yogurt, orange juice, mustard, paprika, poppy seed, honey, salt and pepper and blend in food processor, in blender or with an immersion blender.
Prepare cold water bath with ice. Steam broccoli for 4 minutes or until broccoli just turns bright green. Immediately submerge broccoli in cold water bath to retain the bright green color then drain.
Chop onion, peppers and snap peas.
Combine all vegetables in large bowl and toss with dressing. Enjoy or cover and let rest – seems to be best the next day!
